The kitchen is led by the chief Pavel Demin (PMI Bar, Cococo, White Rabbit, Azurmendi (3* Michelin), 108 (1* Michelin)) following the philosophy of conscious consumption "from head to tail".
The use of the best products at the peak of their maturity in conjunction with the author's fermentation techniques allow us to achieve outstanding taste dynamics and reveal the natural potential of each product to the maximum.
Fermentation in the “meal” is not only unique food but also fermented beverages of its own production. There are more than 15 different flavours of water kefir, kombucha and ginger bug. Fermented drinks are designed not only to quench your thirst, but also to promote better digestion due to the microorganisms contained in them.
The unique approach to the cuisine and bar involves everybody including unexperienced guests into the experiment of discovering new tastes and their combinations.
